Elderberry syrup
Ingredients
75g dried elderberries
700ml water
1tsp ground cinnamon
3-4 whole cloves
1 tsp ground dried ginger (or 1tbsp fresh ginger)
300g raw honey
Method
Add elderberries, water, cinnamon, cloves, and ginger to a large pot and bring to a rolling boil.
Lower the heat, cover, and gently simmer for 40–45 minutes, until the liquid is reduced by about half.
Remove from heat and allow the mixture to cool completely.
Strain through a fine mesh strainer or cheesecloth, pressing the berries well to extract all liquid.
Stir in the raw honey until fully dissolved.
Transfer to an airtight glass container and store in the refrigerator.
Use
I take a tablespoon 3-5 times a day as soon as I feel the first sign of a cold. For children, 2-3 teaspoons a day. This can be taken straight or mixed with water, drinks, smoothies.
The syrup is not suitable for children under 12 months old (due to raw honey).
